I can only really comment on your point about the knights Templar. First, the Templars knew the Levant quite well by the Battle of Hattin. They had fought, worked, and lived in that area for about 70 years when that battle occurred. And the battle took place on Christian territory. The Battle occurred en route from Jerusalem to Tiberias, which was owned by Count Raymond of Tripoli. The battle took place there because Saladin was busy besieging Tiberias. Raymond counseled against going to Tiberias's aid (even abandoning his own wife to Saladin). General consensus among the Latins was that it was a folly to try and attack Saladin at his current position. Sadly, King Guy de Lusignan was quite gullible, and Gerard de Ridefort (Grandmaster of the Templars) and Reynaud de Chatillon both had it out for Saladin. So many in the army expected to lose the battle, and it was not just the Templars fault. Oh, and the Latins knew the fighting styles of the Arabs as well as the Turks quite well by this point. They had already fought two crusades and countless small battles by this point. Military theorists treat these subjects thusly because it's their job. They study military actions in order to develop strategy which can be applied to actual situations. They have the use of hindsight, and can (as can we all) look at the Battle of Hattin and say that, yes the Latins screwed up. The thing that pisses me off about what pisses you off is that you immediately write off what these MILITARY THEORISTS, ARMCHAIR CRITICS, and WARGAMERS have to say. Granted, many (especially the gamers) have much less knowledge of strategy and tactics than they boast of, but that does not mean that they are wrong. The Latins at Hattin clearly took the wrong course of action, and it crippled their kingdom and led to the ultimate Muslim victory 100 years later. Sorry for going on for so long.
